Breakfast: tofu scramble and garlic mushrooms

Today I’m going to be sharing a couple of breakfast recipes I make when I have a little bit more time in the morning. Taking time to make a delicious breakfast is a great thing and tucking into a hearty plate of food is even better when you know it’s going to be full of healthy ingredients that your body will love. Today I’ve got two very simple recipes for you that combined with a thick slice of toasted sourdough make a great weekend (or weekday) treat.


Ingredients:

Garlic Mushrooms

  • mushrooms
  • spinach
  • garlic
  • pine nuts
  • basil

Tofu scramble

  • Tofu
  • Red pepper
  • Spring onion
  • turmeric
  • Paprika
  • Soy sauce

First up is garlic mushrooms and spinach. This is great toast topping on its own or is also a delicious side for lunch or dinner! Simply chop mushrooms into thick slices, add them to a frying pan with finely chopped garlic and whichever herbs you fancy (I used basil) and sauté them in olive oil over a medium heat for about 5 minutes. Once they are nearly cooked, add some pine nuts and a couple of generous handfuls of spinach and stir it in until it’s fully wilted. That’s it! So simple and delicious.
Next up is tofu scramble, a delicious vegan alternative to scrambled eggs. Finely chop a red pepper and a handful of spring onions and fry them in a little olive oil over a medium heat for a few minutes until they begin to soften. Next add in a teaspoon of turmeric, half a teaspoon of paprika and a tea spoon of soy sauce. Then crumble into the mix a packet of firm tofu, mix until everything is coated in the spices (the tofu should all turn a yellow colour) and then cook for a further 4-5 minutes until the tofu is hot and you’re done!
I served these two simple recipes with sourdough toast and some homemade beans. I hope you enjoy!
