Pad Thai 

Hi everyone!

Today I've got a really quick pad Thai recipe to share with you. Noodles are one of my favourite dinners and this is really quick and easy to make and packed with loads of healthy ingredients as well. I've added peppers and broccoli as my veggies in this recipe but feel free to add in whatever you love!

Ingredients (serves 2):

  • Flat rice noodles
  • 1 tbsp Soy sauce
  • 1/2 tbsp Vinegar
  • Sesame oil
  • 1 tbsp Tamarind paste
  • 1 tsp of coconut nectar (or any sweet syrup)
  • 1 tbsp Ginger paste or chopped ginger
  • 2 cloves of chopped garlic
  • 1 lime
  • A bunch of fresh coriander finely chopped
  • 1 sliced red onion
  • 1 sliced red pepper
  • 1 Broccoli cut into florets
  • 1 pack of firm tofu cut into squares
  • 1 thinly sliced red chilli
  • A handful of toasted cashew nuts


To begin with, cook your rice noodles as shown on the package, this should take about 10 minutes which will give you enough time to make the rest of the dish if everything is chopped and ready to go!

Mix together the soy sauce, vinegar, coconut nectar and tamarind paste to make a sauce. Then heat a couple of tablespoons of sesame oil in a frying pan and add the tofu cubes, drizzle about 1/4 of the sauce you made over the cubes. Turn the cubes regularly until all sides are golden. While the tofu is cooking, in a separate pan heat 2 tablespoons of sesame oil and add the garlic and ginger and sauté them for a couple of minutes. Then add the sliced onion, peppers and broccoli florets. Cook these for a further 5 minutes, stirring continuously. Then mix in the cooked tofu and chopped coriander. Serve with half a lime to squeeze over and garnish with finely chopped red chilli and toasted cashew nuts.
