What I Ate Today + Pasta Recipe

This weekend has been very uneventful, I've spent most of it washing clothes and packing for my trip up to Edinburgh next week for the fringe festival. So today I thought I'd share with you what I ate at home on Saturday.

First of all breakfast, this was a simple mix of sautéed garlic, mushrooms and pine nuts on a thick slice of sourdough with some roasted vine tomatoes. So easy to make and so delicious! And I'm not ashamed to say I ate this on the sofa in my pyjamas watching a film – what are Saturdays mornings for if not being lazy?

Lunch was just some leftover sushi rolls that I had made the day before, filled with pepper. I've only recently started making my own sushi after a friend told me it's actually very easy. It's true! This is only my second attempt at making it and it really is quite simple! All you need is some sushi rice and seasoning, nori, a rolling mat and whatever filling you like! It's also very cheap to make, I got all the bits I needed for about £10 from my local world food shop and after making 3 long rolls I've barely made a dent into the sushi rice I bought.

For dinner I made this simple and delicious pasta dish full of goodness. I made it from what I had left in the fridge but it turned out seriously delicious so I'm going to share the recipe here.


  • Pasta
  • Spinach
  • Broccoli
  • Garlic
  • Spring onion
  • Basil
  • Chilli flakes
  • Olive oil
  • Half a lemon to garnish
  • Vine tomatoes
  • Toasted pumpkin seeds

Firstly crush (chopped is fine too) 2 large cloves of garlic into a large frying pan and add a big tablespoon of olive oil and a handful of chopped sprig onions. Sauté this over a medium heat and add in broccoli florets chopped quite small, at this point cook your pasta as it says on the instructions – usually about 10 minutes. Let the broccoli cook for 5-10 minutes before adding a few handfuls of spinach and stir in letting it fully wilt. I then added in a handful of toasted pumpkin seeds and some roasted tomatoes I had left over from breakfast – if you're tomatoes aren't yet cooked, add them in at the same time as the broccoli. I also added a few chilli flakes here to give it a bit of a kick but you can leave these out of you don't like spice. Once everything's done, toss the pasta in the vegetables, garnish with half a lemon and serve!
